The Schneeeule Brauerei philosophy? To give Berlin back a piece of its culture: the real Berliner Weiße! By using historical yeasts from the bottles of the last breweries that existed after the Second World War, they try to get as close as possible to the original. A white beer fermented in the bottle and with a practically unlimited shelf life. Maturing in the bottle gives the Weisse its aroma. The longer the beer matures, the finer the aromas and perlage become. By maturing in wooden barrels and using different aromas such as ginger, flowers or chillies, they also give the Berliner Weiße a modern twist.
